But maybe I was still dancing because music just happens when I bake or cook or well when I do anything. Music is a must and it just makes everything taste better too. I sing to my food - there I said. Confession number two. I sing to my food - I think it works though - things just come out better.
Last night, I was listening to the following:
Frank Sinatra
Dean Martin
Raphael Saadiq
Sharon Jones
Elliot Smith
The Tallest Man on Earth
Beach House
The Xx
Ella Fitzgerald
Janis Joplin
and
Missy Elliot (carry over from my late night walk the other night)
So I have expressed to you what was being played through my computer speakers or record player in this post. Was it just a shameless excuse to show you the fantastic music that I listen to? Maybe. But if you haven't noticed I just like to share things in this virtual realm. If my music or tasty offerings somehow offends your sensibilities….well… that’s a real shame. A darn shame.
I still like you though. And I still love these cookies and I definitely still love all that music.
Hugs and Kisses....

Oatmeal Pecan Chocolate Chip Cookies
* adapted from Southern Living
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups uncooked oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoons salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups semi sweet chocolate chips
1 cup chopped pecans
Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment. Beat until creamy, about 3 to 4 minutes. Add eggs one at a time, beating well between each addition. Add the vanilla extract and beat until blended.
Whisk together the oats, flour, baking powder, baking soda, spices and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the chocolate chips and pecans last.
Bake at 350 degrees F for 10 to 13 minutes or until they’ve reached your desired doneness. Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
Or you could just eat them warm. That’s probably the best idea.
Makes about 2 1/2 dozen cookies.
MMmmmmmmmmmm looks AMZing! And Ol' Blue Eyes and Dino would be proud! Did I tell you I saw a Rat Pack show in Vegas? ;)
ReplyDeleteAmanda! 1. I love your blog. 2. Your blog reallyyy makes me think maybe someday I can cook/bake delicious treats as well...maybe. 3. I also love The Xx...hope all is well pretty lady!
ReplyDeleteSteve you did tell me about the Rat Pack Show and I'm totally jealous!! And I've never been to Vegas so double down on that jealously.
ReplyDeleteKristi - you're so sweet!!! And yes...love the Xx..oh my yes.
The question remains: What came first, the music or the baking? And PS - a warm cookie is always a better cookie. Good looks.
ReplyDeleteMusic always comes first :)
ReplyDeleteAnd I agree warm cookie is always a better cookie but how bout this, I prefer a cold brownie. Gasp! I know people just dont understand.
