Those summer days...and nights

Oh, Hi!

It's been a little bit. I hope you are well and you enjoyed your 4th of July holiday. I sure did...
The fireworks in DC were pretty darn good. Lots and lots of people.
But still...there is something epic about watching them with the Washington Monument right there...

Yeah...I liked it a lot...

I also did a lot of biking this past weekend. I live right by this awesome place. The National Arboretum. Have you heard of it? It's super and it's seriously in my backyard...well almost.

The original columns of the Capital are there. They are Corinthian columns from the U.S. Capitol (I've had discussions lately about the types of columns). And these ones...well they bore witness to presidential inaugurations from Andrew Jackson to Dwight D. Eisenhower - pretty rad eh!?!?
There is still so much to see at the Arboretum...another bike trip/picnic is in the works!

But seriously...I've been slacking on photos and blogging abouts all the food I've been making lately. I am just saying...the pizza creations (three to be exact) have been AWESOME!!!

A pesto pizza with roasted garlic, artichokes, kalamata olives, and lots of yummy cheese. Oh the cheese...I love cheese perhaps too much these days!!!

A spicy tomato sauced pizza w/ smoked mozzarella, mushrooms, roasted red peppers, and fontina cheese complete with some roasted garlic cloves and a little adobo chili for topping - you can't handle that can you?? The crust was infused with garlic and Italian spices too! Oh boy - heaven. 

Last night was a Mexican pizza - again the crust was jazzed up with garlic and a little of chipotle peppers. We were nervous about the crust but it came out so delicious and crispy. Just what we were looking for.  Enchilada sauce was spread over the crust with fontina cheese, seasoned veggie crumbles, corn and roasted poblano peppers. Oh but we didn't stop there...We had some fresh topping of a tomatillo/jalapenos, pico de gallo, and diced avocado. Ummm...yeah...best Mexican pizza I've had EVER!!!  


Oh and you know when you have ideas like "Hey how about we make some smoked salmon & goat cheese muffins with fresh dill?" You know how those ideas happen and they never turn into real things? Well...that very idea turned into reality. Yup! Just saying...don't let those creative thoughts fly by people...get in the kitchen. You won't regret it. It may not come out right but it's always fun to try!!!
