Poached Eggs a la Florentine

 I was told once that when I was a little girl I was cute and quiet, you know how most little girls are. Then something changed around second grade after this little girl had heart surgery. This little girl was now loud and had more energy than ever and her mother thought that something must have gone seriously wrong in surgery.

What did the doctors do? Where did her sweet and quiet little girl go?

Now my mom had a wild child as a daughter, running around with the boys (her brothers) and playing rough and tough. Some things haven't changed. I am in love with this photo of me and my mom. I think it is because of my awareness of someone taking the photo. I still have this ability to catch people taking photos of me. I am now a little older than my mom was here as she rocked the 80s ladies mullet, she was so hip. So cool. And had to raise five crazy kids. She had her work cut out for her. 

She did well though. We understood what "Mom says Goes!" She knew how to discipline her kids even though some of us thought we were rebels. Her tough love made us know how to work hard and never rely on others. She always said that if we wanted to know how to do something we needed to try and figure it out first ourselves instead of asking someone else how to do something. 

To this day I do this, I will try and figure something out before asking, and even if I screw things up worse I can say I tried. And then immediately call a professional (Mom) for assistance. 

So in honor of all mom's out there I offer you a simple breakfast that you can make for your mom. It is easy and even if you don't want to poach an egg an over easy or sunny up egg will work out just fine for this. I hope all you mothers out there have a wonderful day. 
Poached Eggs a la Florentine
Sliced bread, toasted or grilled
Eggs
Fresh spinach
Olive oil
salt & pepper

Poaching eggs is much more simple than you think. It just takes a little patience. And practice makes perfect.
In a shallow pan, heat water and a splash of vinegar until just boiling. Turn down to a slow simmer. Note: the splash of vinegar won't make the egg taste like vinegar it just helps the eggs congeal. But if you are freaked out by this feel free to not add the vinegar. 

Break an egg into a small coffee cup. Carefully drop the egg into the simmering water and with a spatula help nudge the egg white close to the yolk. Bring the water back to the slow simmer then repeat with the remaining eggs. You may need to do this in batches depending on the size of your pan. Cook the eggs 2-3 minutes depending on how you like your eggs. Using a slotted spoon, gently remove the eggs to drain off the water. 

You can saute your fresh spinach in some butter/olive oil or just use fresh. I like mine sauteed so I just threw some in a pan for a minute or two to soften. 

Take your grilled/toasted slice of bread and top with your spinach. Then carefully place your poached egg on top. Season with salt and pepper and VOILA!!!!
