Do you ever break out in dance when you are home alone? And I don't mean a lil' side to side stepping I mean full on dancing in your room? Or your living room? Or better yet your kitchen?

I love how the mood can just strike us to dance. I also love how moods to make something new will strike me. For instance, I have a love of sandwiches. I think they are the perfect lunch. And admittedly, I usually flock to the same kind of sandwich.
But today, I thought let's do this Amanda, let's make something new. Something that I have never made before. And so I pulled out an avocado and some edamame and as the say folks the rest was history.
You never really can be too sure where creativity can take you. Sometimes it can be a masterpiece or a big ol' mess. I think today's creation wasn't exactly a masterpiece but it was in no way a failure. I loved how this was almost an egg salad or really more like a chicken salad because of the texture of the edamame and the creamy avocado. Mmmmmm...
Even if you are not a vegetarian I think you would enjoy this sandwich. It is healthy and was perfect on some toasted bread with some farm fresh yellow squash slices. I don't think I have ever put raw yellow squash on a sandwich. It was a pleasant surprise.
So after you eat this super healthy sandwich you will probably be so excited that you didn't go with a burger and fries that you will bust out into an awesome dance. I have put together a playlist for just that kind of thing:

Edamame Avocado Salad SandwichMakes 2-4 sandwiches (depending on size)
1 cup shelled edamame, thawed if frozen
1 hass avocado, pitted and peeled
1 Tbls mayo (double the yogurt if omitting and add a dash of vinegar)
1 Tbls Greek yogurt
1 clove garlic, minced
1/4 tsp cayenne pepper
dash of ground white pepper
1/4 cup fresh cilantro, chopped
salt to taste
Bread slices
thinly sliced yellow squash (optional)
Pulse the edamame in a food processor or blender until chopped, DO NOT puree.
Remove edamame from food processor into a medium sized bowl. Add in the avocado and mash together with a fork, then add in the mayo, yogurt, garlic, cayenne, white pepper and salt.
Fold in the chopped cilantro. Taste and adjust seasoning as necessary.
Toast/grill some bread slices and place the filling on once side of the bread slices and top with thinly sliced yellow squash or another sliced vegetable.
