I think on any given day my diet consists of coffee, avocado, cheese, and veggies. Lots of veggies. And lots of cheese. But today I made chicken. Kicked up, spiced up, curry chicken. There are probably a billion recipes for chicken and most people have that "go to" recipe for chicken.
I myself do not have a "go to" recipe for any meat really since I do not eat that much of it but when I do I am convinced it has to be marinated and have some wonderful spice to it. This recipe "meats" all of my requirements.
This would be a great date night recipe. It comes out looking and tasting great. Your date will think you worked all day when really. It doesn't take too much time at all, well, aside from the wait while the chicken marinates. But you will be doing other things while it does that right?
Like pulling out some of your favorite albums to spin on the record player. Fluff all of the pillows on the couch. Wipe down the bathroom sink. Change your outfit about 12 times.
All of that will take 2-4 hours and then you will be set to open a bottle of cooking wine...and by cooking wine I mean the wine you drink while you cook. Put on one of your hand picked records and get set to impress. It's date night.
The marinade for this chicken would work with any number of proteins and vegetables. I think it would be great with potatoes, cauliflower, and carrots. It would also be fantastic with a mild white fish. Pick your favorites and have at it. There is a ton of awesome flavor here to work with. It is a winner for sure.

Coconut Curry Chicken2-3 lbs. chicken pieces
1 can coconut milk
3 Tbls curry powder
juice of 1 1/2 limes
1 Tbls honey
2 green onions, thinly sliced
1/3 cup chopped cilantro
1/2 tsp ground cinnamon
1 tsp salt
Rinse and dry the chicken pieces.
Mix all of ingredients in a small bowl. Place chicken in the bowl with the marinade. Massage the chicken slightly with your hands.
Cover the bowl with plastic wrap and place in the refrigerator for 2-4 hours.
Remove the chicken from the refrigerator. Set out on countertop for about 15 minutes to remove the chill. Heat a deep-sided skillet over medium-low flame and place the chicken and all of the marinade in the skillet.
Slowly cook the chicken for about 20-30 minutes, depending on the thickness of the pieces. Once the chicken is nearly done (fully cooked chicken should have an internal temperature of 165-170 degrees) and then finish on a hot, oiled grill to mark the skin.
Garnish with fresh cilantro and sliced tomatoes and serve up with some rice or couscous.
