So these are cookies...but you probably already guessed that didn't you?
And these cookies are in no way shape or form "healthy" despite their name. I named them Trail Mix because they remind me of trail mix. That is all. They use regular butter, peanut butter, chocolate chips I mean everything I could throw in them and on them. Alas that may be why they are so good.
And they are good...I mean you have to stop yourself at two cookies or you will eat a dozen good.
Are you wishing you could reach through your computer/phone screen and grab a cookie? I bet you are, because I am doing the same things while trying to type. This makes things difficult.
I think the best time to eat these cookies would be when you are really stressed. You need something to slow you down and put yourself at ease. I have been trying to plan some major life decisions lately and there are two things that will always work to calm my nerves. Something refreshing like swimming and something indulgent like these cookies.
So sit back and just relax and eat some cookies. I mean life is just better with cookies. And the answer to many of life's serious questions is always, always COOKIES!!!
Trail Mix Cookies with Peanut Butter Drizzle
1 cup unsalted butter
1 cup granulated sugar
1 cup brown sugar
2 large eggs
2 tsp vanilla extract

1/3 cup peanut butter
2 1/2 cups rolled oats
2 cups unbleached all-purpose flour (or whole wheat)
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 cup semi sweet chocolate chips

1/2 cup peanut butter chips
2/3 cup dried cranberries1/3 cup shredded coconut
1/3 cup sliced almonds
Preheat the oven to 375°F. Lightly spray two cookies sheets.
Beat together the
butter and both sugars, and then beat in the eggs (one at a time) and vanilla. Finally cream sugar mixture with the peanut butter.
Mix together the dry ingredients (flour, oats, baking soda/flour, and salt). Slowly add the dry mixture to the creamy sugar mixture. Add in three batches and do not over-mix. Slowly stir in by hand the chips, cranberries, coconut and almonds until combined.
Drop the dough onto the cookie sheets by tablespoonfuls. Press down slightly on the tops of the cookie rounds. Make sure to leave room between cookies so they can spread without touching.
Bake the cookies for 14 to 15 minutes, or until lightly browned. Remove from the oven, and cool on wire racks. Finally drizzle with peanut butter frosting.
Peanut Butter Drizzle
1 cup powdered sugar
2 Tbls milk
1/4 cup of peanut butter
Mix the powdered sugar and milk together until smooth. Then mix in the peanut butter. Place in a zip-lock bag. Twist peanut butter drizzle into one corner of the bag. Snip the corner with scissors and drizzle cookies in a zig zag pattern.
