Healthy Curried Chicken Salad

 Wow. Has it really been this long since I have blogged? What has happened? I have been cooking but not blogging. Sheesh!!!

Hopefully with the onset of the holidays I will be reminded to share recipes for what I am cooking or baking. I am so excited about what I generally consider "baking season" and hope to find and work on some new recipes. I also think I may have to share some of what will I am sure be an culinary experience this coming weekend in NYC. Stay tuned for that!!!
 So back to this chicken salad...it is really my go to recipe. I remember always loving my Grandma Betty's chicken salad because she used curry powder and grapes. In her version she usually uses Miracle Whip but I generally do not buy or eat Miracle Whip so I use something that I always seem to have, Greek yogurt. Greek yogurt is very healthy for you and works well in place of mayo. I add just a little mayo for the tang and then add some lemon juice to thin it out. 

If you don't like Greek yogurt generally you could always use mayo or miracle whip, whatever you have on hand. I also just happened to have a red pepper handy so I added that in but feel free to add any chopped fresh vegetable you'd like, such as, celery or red onion. If you don't have any red grapes handy you can always toss in some apples or dried fruit. Feel free to play around with this and add all your favorite things to the mix. Have fun!!!
Healthy Curried Chicken Salad
2-3 pounds, boneless, skinless chicken breast
1 heaping cup red seedless grapes, halved
1/2 cup diced red pepper (or celery or onion)
1/2 cup roughly chopped pecans
1 cup plain Greek yogurt
1-2 Tbls mayo
1 Tbls curry powder
1/2 tsp cayenne pepper
1 lemon, juiced
1-2 Tbls roughly chopped fresh dill
1 tsp garlic powder
salt and pepper

Season chicken breast with salt and pepper. Cook in skillet with a little oil or bake in the oven. Cook until center is no longer pink. Set chicken aside to cool.

Mix together the yogurt, mayo, lemon juice, dill, curry, cayenne, and garlic. Taste and adjust seasonings  as necessary.

Cut chicken breasts into bite sized chunks. Mix with the yogurt mixtures. Toss in the red pepper, pecans and grapes. Mix until thoroughly combined.

Serve chicken salad on some whole grain bread with mixed greens and cucumber or just eat by itself. Enjoy!!!
