Sesame Ginger Crusted Tuna

 Do you ever have one of those days where you can't seem to get anything right? Even if you are doing something that you have done a million times before and it just doesn't come out right and then you start blaming it on things and you realize you make so sense whatsoever. You should just suck it up and come to understand that you aren't perfect and even striving for perfection can be a bit silly.

I had one of those days. I couldn't melt white chocolate for the life of me. I tried I think 2 or 3 times and I just hated myself. I have done this time and again why isn't this coming out right. I blamed the chocolate. I blamed the double boiler. I blamed the dogs. I blamed everyone and everything but myself. I think I just wasn't supposed to be melting chocolate right then.

But I needed redemption and finally got myself together and made it work. At the end of it all I still wasn't completely satisfied with myself. I hate that...even when things are back to "normal" I am still pissed off. Why oh why Mama, are there days like this?
 There are days when you just need to get it right. When you need to roll that seven and when you need to look as good as you did in that dress as when you tried it on in the store. There are days when you just need to eat as super healthy and satisfying lunch that takes only five minutes to make. Yup. Days that are simple and no fuss.

So this was lunch, it was fast it was easy and it got someone who previously claimed to hate tuna to realize they were wrong about tuna. I even got them to say "I like tuna" and believe it. Ah, today was a good day! I feel better already. 

So take a moment and stop at the fish counter instead of going past like you usually do and stop and look at the beautiful tuna you almost always pass up. Look at its beautiful pink color and think about how awesome it will look on a plate of bright green spinach topped with the orange glow of carrots. Why not color your life with well...colorful food. You won't be disappointed with this one. 
Sesame Ginger Crusted Tuna
2 fresh tuna steaks
2 heaping handfuls spinach
1/2 carrot, grated
2 green onions, chopped
a bit of red onion, thinly sliced and chopped
balsamic vinegar
salt and pepper 
olive oil
sesame ginger seasoning* (see not below)

Remove your tuna steaks from the refrigerator and rest on the counter for about 5 minutes. Season the tuna steaks with salt and pepper on each side and then dredge the tuna steaks in the sesame seasoning. 

Heat about 2 Tbls of olive oil in a non-stick skillet over med high heat. Wait until the pan starts to smoke and then add in your tuna. Sear the tuna for about a minute on each side. If you do not like your tuna rare then cook a bit longer but this dish should be served rare to medium rare in my opinion. 

Remove the tuna from the pan and rest on a cutting board. In the same hot pan toss in your spinach and saute for only a minute, the spinach should start to wilt and be bright green in color. 

Place your spinach on a plate. Slice the tuna and top the spinach with the slices. Garnish on top with the carrots, green onion, and red onion and a bit of balsamic vinegar. If I would have thought ahead more I would have reduced down the vinegar to intensify it's flavor and create more of a sauce but just out of the bottle is very tasty as well. Be sure to serve this dish immediately. 

*For the seasoning: You can probably find a sesame ginger mix at the store but if not just combine together some black and regular sesame seeds, a pinch of red pepper flakes and a dash of some ground ginger. Toast slightly in a pan with just a bit of sesame oil. Cool completely.
